


Agricola Soi
AGRICOLA SOI in Nuragus is a small winery, almost a territorial garrison, which was born, about twenty years ago, from a project cradled over the years by its conductor, Stefano Soi: attempting to evolve the concept of agriculture into agricultura.
Two words are enough to summarize the business philosophy of Agricola SOi: belonging and respect.
Belonging to that microcosm of which Nuragus is the center: a small town, devoted to agriculture and pastoralism, in the heart of Sarcidano, characterized by those crops – olive, vine, pasture and fodder – that shape its agrarian landscape. Hills flooded by the sun and traversed by the mistral and sirocco. Soils rich in skeleton or loose sands that nevertheless allow the vines, raised in aridoculture, to very slowly develop deep roots.
It is hard to say what criterion inspired the choice of land where to plant the vines: perhaps the exposure, the light, the wind…certainly the energy perceived by walking on it.
Absolute respect for the area’s ancient winemaking tradition, its sustainable development and family farming, demonstrated by Stefano Soi, an architect who decided to return to his native places to pursue his life path with a new philosophy.
By farm choice, no water support is given, no chemical fertilizer, no chemical weeding-just frequent mechanical and manual tillage. The varietal choice has been to use only native vines grafted in the field manually. These include cannonau, bovale muristellu, monica, cagnulari, Sardinian barbera and nuragus.
The vines are pruned according to the Simonit & Sirch method, the so-called soft pruning, and the grapes are harvested by hand in crates of approx. 20 kg and immediately sent to fermentation.
